Must possess a high school diploma and supervisory experience in quantity and quality cooking or baking.
Assists in the instruction and training of all inmate cooks, bakers, kitchen and dining help in all phases of their duties to include daily sanitation; assists in training new personnel assigned to the cafeteria and in the security of the cafeteria (discipline of inmate employees and all other inmates in addition to maintaining security of all food supplies and equipment); acts as a correctional officer by ensuring internal institutional security when performing shakedowns, escorting inmates from one location to another, etc.
