he 2nd Processing Departments
1) Chiller Rehang
- rehang chickens 25-30 per minute
2) Cone lines
- hang front halves
- clip tenders
- trim breast
- cut wings
- pull tenders
- some of these positions will use knife or scissors
3) Cut-up/Cut Wings
- Saw Operator cutting meat with a mechanical saw or cutting meat with a knife
4) Drum debone-
- Hang drum sticks, trimming product and or grading
5) Thigh Debone
- Remove the bone out of the thigh using wizard knife.
6) Scale Operator
- (Weighing product) – Operating a scale, making weight, and depending on location placing a product label on the box that has just been weighed
7) CVP Machine Operator
- Operating a CVP Machine to seal the plastic bag the product is in
8) Ice or C02 Layer
- Covering the product with the correct amount of C02 or ice
9) Stack Off
- Palletizing finished product by stacking product in the correct configuration on a pallet
10) Box Liner
- Lining boxes with bags
11) Tray Pack
- Packing trays of chicken to company and customer standards
There are times when additional cutting or trimming is required. During this operation team members will be required to use either scissors or knives.
During any of the above task, constant focus and concentration is required to ensure tasks are performed in a way that promotes food safety and quality.
Environment:
- Employees work alongside an automated line with either a mechanical conveyor or shackles
- Increased noise levels due to machinery
- Varying range of temperatures
- Damp and wet environment
